NUA is a new patisserie project that focuses chiefly on interaction between employees and customers by turning the bakery itself into the display.

The project offers the chance both to run workshops for helping people with problems like depression, and to raise awareness about the quality of traditional patisserie compared to industrial products. It also provides a cafeteria service that allows customers to taste products onsite.
The proposal also seeks to change people’s image of patisserie in which the pastry kitchen is completely concealed at the back of the premises or only partly visible, which could put customers off as they cannot see when and how the product is made.
therefore recommends opening up the kitchen –which patisseries normally hide– on view to all, and using it as a means of communication between the outside and the inside.
